I absolutely love this quick breakfast muffin. The flavors are absolutely delicious. The mixture of the sausage with feta puts it over the top with the perfect kick. For all those that are early to rise and dont have time to cook your breakfast, this recipe is perfect. Having a recipe like this up your sleeve can definitely prevent you from making poor breakfast choices esp on the run. For a serving size of 2 muffins, these only have 250 calories, 20g fat, 2g carbs, and 16g protein.
Sausage Feta Spinach Egg Muffins
Ingredients
1tbsp EVOO
2 cups fresh spinach or 1/2 cup frozen spinach
6 eggs
3 oz HEB whataburger sausage
3/4 cup feta cheese
salt/pepper to taste
Directions
Preheat oven to 350 degrees.
in pan, cook sausage and crumble, remove from heat
Defrost frozen spinach or if using fresh spinach, saute in oil til mildly wilted. remove from heat
in a bowl, whisk together eggs and feta. season with salt & pepper
add the spinach and sausage, stir til combined
using a 6 cavity muffin tin, spray with non stick spray and evenly distribute egg mixture, 3/4 full
if using a 12 cavity tin, fill any remaining empty cavities with small amount of water
bake for 20 minutes or until golden brown on edges
store leftover muffins in fridge in airtight container.
to reheat, stick in microwave for 3o-40 secs
